Blue Chicory (Cichorium intybus) - Also referred to as Coffee Weed or Italian Dandelion, this is a well-known edible plant with a rich history. The roots are ground for herbal tea blends and “chicory coffee”, a Cajun specialty. Leaves were documented in Ancient Roman accounts as possessing unique healing properties. Stunning blue flowers, electrified by the sunshine, make this plant very noticeable along roadsides from May to October. Flowers do close slightly in the afternoon on cloudy days. This is a medium-tall growing biennial (3-5 ft) and will reoccur every year, even in less than ideal soil conditions. Chicory is a very drought tolerant species that has a deep taproot. Thrives in full sun! Blue Chicory is a stand-out flower or herb and worthy of occupying a special place in most growing spaces!

Planting Instructions: Planting should be done 2-3 weeks before the last frost. Direct sow blue chicory seeds in early spring, planting the seed 1/4" deep in loose soil; keep the soil lightly moist until germination, which should occur in 10-14 days.
