German Thyme (Thymus vulgaris) - German Thyme is a woody, perennial evergreen that steadily propagates over the years. A favourite of honey bees, its aromatic pink flowers are a standout feature. Growing up to 12 inches tall, thyme thrives in containers and tolerates dry conditions. It is excellent in cooking, teas, potpourri, and is a key ingredient in bouquet garni. To preserve, dry thyme by tying the stalks together and hanging them out of direct sunlight. Once brittle, remove the leaves and store them in a cool, dry, dark place. At the end of the growing season, cut back thyme by one-third to encourage healthy spring growth and abundant flowering.

Planting Instructions: Start seeds indoors 6–8 weeks before last frost. Sow seeds on the soil surface and press lightly—do not cover, as light can aid germination. Keep soil lightly moist and in a warm, bright location. Seeds typically germinate in 14–21 days.
Harden off seedlings before transplanting outdoors after frost. Space plants 25–30 cm apart in full sun with very well-drained soil. Thyme prefers dry, low-fertility conditions once established.
