Salad Burnet (Sanguisorba minor) A native of Europe, brought to North America by the Pilgrims. The young leaves on this plant have a cucumber-like taste making them attractive salad greens. This edible perennial doubles as a nice ornamental ground cover and is extremely hardy, surviving in our raised planters and in the wide open fields with no mulch or cover.
