Salad King Endive (Cichorium endiva) A large growing endive variety introduced in the 1950’s, which grows prolifically, resists bolting, tip burn, and hardy to moderate frosts. Salad King can be harvested as a baby leaf but as it matures, it vigorously produces larger, finely cut dark green leaves that are slow to bolt. Outer leaves can be tied to blanch a 2 foot heart.
