Marshmallow Plant (Althaea officinalis) A native perennial species to Africa and regions of western Europe, closely related to Hollyhock. The roots from this plant were the original source of an ancient Egyptian confection that eventually transformed into today’s sugar-based candy marshmallow which derives nothing from the plant itself. There are many historical records of this plant in Greek and Roman culture referencing its healing properties of treating wounds and inflammation. The creamy white roots of this plant are extremely gelatinous and have a wonderful flavour when simmered. The leaves are also consumed, often fried with onions and garlic. Stems can reach up to 5 feet bearing beautiful 1-2 inch, white-light pink flowers. Not surprisingly, the plants thrive in ‘Marshy’ areas where moisture is abundant. Roots are harvested in the fall.

Planting Instructions: Sow seeds indoors 6 weeks before the last frost date. Cover very lightly with soil, and tamp down. Keep evenly moist until germination, which takes between 7 to 14 days. Once the seedlings reach 2-3 inches they can be transplanted out to a moist, sunny location spacing 12-18 inches apart. Seeds can also be directly sown into a moist and fertile bed on the last frost date.
