Blue Chicory (Cichorium intybus) - Also referred to as Coffee Weed or Italian Dandelion, this well-known edible plant has a rich and storied history. The roots are traditionally ground for herbal tea blends and “chicory coffee,” a Cajun specialty. Leaves were documented in Ancient Roman accounts as possessing unique healing properties. From May through October, stunning blue flowers, electrified by sunshine, make this plant highly noticeable along roadsides. On cloudy days, the flowers close slightly in the afternoon. This medium-tall biennial grows 3–5 feet in height and readily reoccurs each year, even in less-than-ideal soil conditions. Blue Chicory is highly drought tolerant thanks to its deep taproot and thrives in full sun. A true stand-out as both a flower and an herb, it is well worthy of a special place in most growing spaces.

Growing Information: Direct sow seeds outdoors 2–3 weeks before last frost. Plant seeds 0.5 cm deep in loose, well-drained soil and keep soil lightly moist until germination. Seeds typically germinate in 10–14 days.

Thin seedlings to 20–30 cm apart in full sun. Chicory is hardy and drought-tolerant once established, thriving in average soils.
