Banana Squash (Cucurbita maxima) A winter squash variety known for its large, banana-like shape fruits with orange-yellow flesh and sweet, earthy flavour. Introduced from Peru to North America in the late 1890’s. The original Peruvian strain was said to have blue-grey skin with orange stripes. Some of the striping is still apparent in today's seed lineage.
