Hedou Mini Pak Choy (Brassica rapa subsp. chinensis) A miniature pak choy with dwarf heads and very popular across Chinese markets and restaurants. Said to have first been grown in the village of Hak Tau in Hong Kong by an elder who guarded the seeds for years until they were stolen one night and subsequently sold on the grey market, eventually spreading across the region and into North America by the mid 1900’s.
