Hollow Crown Parsnip (Pastinaca sativa) An heirloom variety pre dating 1885. Long, smooth, tender and sugary roots can grow up to 30 cm (12″) long and be up to 7.5 cm (3″) wide at the shoulder. This is a slow germinator, so be patient since seeds can take up to 3 weeks to sprout. If you can delay harvest until frost, Hollow Crown parsnip develops a more intense, sweet, nutty flavour. An excellent addition in soups or stews! Mature roots are 10-12 inches long and 3 inches thick.

Planting Instructions: Sow Parsnip seeds in a furrow 1/4 - 1/2 inch deep and 1 inch apart. Thin after germination to 2 inches apart. Sow any empty spaces throughout the year. Keep rows 12-18 inches apart. Allow Parsnip seed 14-21 days to germinate.
