Dark Red Kidney Bush Bean (Phaseolus vulgaris) Dark Red Kidney beans are one of the most widely used heirloom beans. Dark Red Kidney is a bush variety of dried bean containing 5 large, red kidney shaped beans in each pod. Our seed source comes from Audrey Little of the Ottawa Valley. The beans have been grown by her family for four generations. Pull and dry the plants upside down near end of season if wet conditions are prevalent. This is a great storage bean with high protein content. We have been able to finish these to maturity well before 85 days in 2 of 3 seasons here in Nova Scotia (Zone 5). This year pods were mature around 77 days. Beans must be fully cooked to avoid consuming the natural toxin phytohaemagglutinin.
