Salad Burnet (Sanguisorba minor) - A hardy perennial native to Europe and introduced to North America by the Pilgrims, Salad Burnet has long been valued as both a culinary and medicinal herb. The tender young leaves have a fresh, mild cucumber-like flavour, making them a wonderful addition to salads, beverages, and summer dishes. Traditionally, Salad Burnet was also used to support digestion and as a refreshing tonic herb. This attractive, low-growing perennial doubles as an ornamental ground cover and is exceptionally cold hardy. We have had great success overwintering Salad Burnet in raised planters and exposed open fields with no mulch or winter protection. Plants form tidy mounds of fern-like foliage and send up long flower spikes topped with rounded seed heads, adding subtle texture to herb gardens and borders.

 Planting Instructions: Start seeds indoors 5–6 weeks before the last spring frost. Broadcast seeds on the surface of the soil and cover with a plastic dome to maintain moisture, as light aids germination. Seeds can also be directly sown outdoors in early spring, barely covering with soil. Space seedlings 2 inches apart and thin to 10 inches once established. Plants prefer full sun to partial shade and well-drained soils.
