Salsify (Tragopogon porrifolius) - An old-fashioned European heirloom root vegetable, also known as Oyster Plant or Vegetable Oyster, traditionally grown for its long, slender, creamy-white roots with a delicate flavour often compared to oysters. This hardy biennial develops grass-like foliage in its first year, followed by distinctive purple to mauve, daisy-like flowers in its second year if left to bloom. The flowers open in the morning and close as the day progresses, later developing into large, fluffy seed heads resembling those of dandelions. Growing approximately 60-100 cm (2-3 feet) tall, Salsify is a rewarding addition to the vegetable garden, offering both an unusual edible root and ornamental interest.

Growing Information: Direct sow outdoors in early spring, as soon as the soil can be worked. Sow seeds 1–1.5 cm (½") deep in loose, deep, stone-free soil. Keep the seedbed evenly moist until germination, usually 14–21 days. Thin seedlings to 8–10 cm (3–4") apart, with rows 45–60 cm (18–24") apart. Grow in full sun. Water regularly to encourage straight, well-developed roots. Harvest in fall, preferably after a few light frosts for improved flavour. Hardy biennial, usually grown as an annual root crop.
